What it means
A proportional-integral-derivative control system that holds brew temperature far more steadily than a simple thermostat. Many home machines expose PID settings so the barista can adjust temperature directly. Stable heat removes one large source of shot-to-shot variability — but a PID does not fix poor puck prep or a weak recipe.

Where this leads
Each one pushes this into the cup, compares it, or helps you act on it.
How the shot starts
Pre-infusion
Control changes show up first at the start of the shot.
Use pre-infusion to smooth the beginning of the shot, not to compensate for careless preparation.
What people mean when they say "extraction"
Espresso Extraction
Use control only to change extraction intentionally.
Separate extraction from strength in your thinking. One asks how much was dissolved, the other how concentrated the drink feels.
How you read the result
Yield
Watch the result, not just the setting.
Think of yield as the result you are aiming for and brewed weight as the way you verify you hit it.
How you read the result
Brew Time
Then see how the control changes the shot rhythm.
Use time as a guide rail alongside yield and taste, not as the whole recipe.
