What it means
The process of dissolving flavour compounds from coffee into the liquid in the cup. Sour, empty shots are often underextracted, while harsh, drying shots tend to signal overextraction or a poorly balanced recipe. Extraction is often confused with strength — but a strong espresso is not automatically well extracted, and a weaker-feeling shot is not automatically poor.

Where this leads
Each one pushes this into the cup, compares it, or helps you act on it.
What people mean when they say "extraction"
Espresso Strength
Separate how much dissolved from how concentrated the drink feels.
Use the word strength carefully. It describes concentration, not quality.
The numbers that define the shot
Brew Ratios
Ratio gives extraction a practical structure.
Use ratio and taste together. The number gives structure, but the cup still decides whether the recipe is right.
How you read the result
Yield
Output is the easiest way to keep extraction measurable.
Think of yield as the result you are aiming for and brewed weight as the way you verify you hit it.
Before the water hits
Channeling
One of the clearest reasons extraction goes uneven.
Treat puck prep as part of extraction, not as a ritual before it.
